Our family loves dessert. Cupcakes, brownies, ice cream, you name it, it's probably in our fridge, freezer or pantry. But our girls know you need to finish your dinner to get the sweet treat.
They have been doing great with this all summer, so we've been having our fill of traditional desserts. Recently, we had some chocolate chip cookies still laying around and the girls suggested we make ice cream pizzas. I'd never made one before but it sounded delicious!
We had a hard time selecting a flavor because there are so many good ones like Pistachio Almond and Butter Pecan which brought back some great memories of my sister and me eating scoops of ice cream out of sugar cones during the summertime. But we decided the Homemade Vanilla was the best choice for our ice cream pizza.
RECIPE: ICE CREAM PIZZAS
STEP 1: Bake the cookies. You can choose any flavor you like - sugar, oatmeal, chocolate chip. If you choose to bake them instead of reheat leftovers, be sure to allow enough time to cool so the ice cream doesn't completely melt. If you've got cookies already on hand, simply heat up them up in the microwave. About 20 seconds should do. This helps with spreading the ice cream. Which leads us to...
STEP 2: Scoop out one scoop of ice cream.
STEP 3: Place the scoop of ice cream on the cookie.
STEP 4: Using the other end of the scoop, flatten and spread out the ice cream on the cookie.
STEP 5: Select your toppings and decorate the pizza. In this case, we used M & M's and sprinkles. But gummy worms and Skittles are good choices, too.
STEP 6: VOILA! Enjoy your ice cream pizza.
